½ teaspoon of red chili flakes
1 pound (450g) of ground lamb
1 teaspoon of salt
One red onion of medium size, sliced into thin pieces.
One jalapeno pepper, seeds removed and thinly sliced
One small red bell pepper, seeds removed and thinly slic
1 tablespoon of vegetable oil
1 cup of plain Greek yogurt (285g)
2 cloves of garlic, minced
Four brioche or potato buns, used for serving.
1 cucumber, deseeded and diced
1 cup of fresh cilantro
- In a dry skillet, toast the cumin seeds, Sichuan peppercorns, and red chili flakes. Crush them into a coarse powder using a mortar and pestle or a spice grinder. Set aside.
- Combine about half of the spice mixture with the ground lamb and form it into four patties. Sprinkle salt on both sides of each patty for seasoning.
- Preheat a grill or cast iron skillet over high heat until extremely hot. Sear the burgers on both sides until they develop a crispy exterior, approximately 1-2 minutes per side.
- Transfer the cooked burgers to a plate and allow them to rest, covering with foil. In the same skillet (if using cast iron) or a separate skillet (if grilling outdoors), add a bit of vegetable oil and sauté the onions and peppers until they caramelize. Sprinkle them with half of the remaining spice mixture.
- In a bowl, mix the yogurt, minced garlic, and salt to taste. Incorporatze the remaining spice mixture by stirring it in.
- To assemble the burgers, spread some of the yogurt mixture on the bottom half of each bun. Top with diced cucumbers, followed by a burger patty. Add the caramelized onion and pepper mixture, more yogurt sauce, and fresh cilantro. Serve and enjoy!
