  • 1 ½ pounds of chicken breast (680g), thinly sliced into ¼-inch pieces

  • 1 tablespoon of cornstarch

  • 3 tablespoons of oil (divided)

  • 3 tablespoons of oil (used in separate steps)

  • 2 Thai bird chilies, thinly sliced (if desired)

  • 1 red bell pepper, thinly sliced and deseeded

  • 5 scallions, sliced into 2-inch pieces at an angle

  • 2 tablespoons of Thai Chili Paste (Namprik Pao)

  • 1 tablespoon of fish sauce


  • Place the sliced chicken in a bowl, then add 1 tablespoon of cornstarch and 1 tablespoon of oil. Mix thoroughly and set it aside.
  • Heat a wok over high heat until it becomes hot and smoky. Add 2 tablespoons of oil and the chicken. Stir-fry the chicken for 1-2 minutes until it’s well-seared.
  • Introduce the sliced garlic, and if desired, the Thai bird chilies, red bell pepper, scallions, chili sauce, and fish sauce. Continue the stir-frying for an extra 2 minutes.
  • Serve alongside steamed jasmine rice.
