Spicy Thai Basil & Pork Belly Stir-fry: A Taste of Thailand

Ingredients

  • 1 tablespoon of vegetable oil

  • 5 cloves of garlic, sliced

  • 3 Thai chili peppers, thinly sliced

  • 1 pound of lean meat, thinly sliced

  • 1 teaspoon of sugar

  • 1 tablespoon of fish sauce

  • 2 teaspoons of oyster sauce

  • 1 tablespoon of light soy sauce (or thin Thai soy sauce)

  • 2 teaspoons of Thai black soy sauce (or 1 teaspoon of Chinese dark soy sauce)

  • 1 1/2 cups of holy basil or Thai basil leaves, packed

Directions

  • Heat a wok over medium heat and add the oil, garlic, and chilies. Cook for 1 minute.
  • Increase the heat to high and add the pork belly. Stir-fry until caramelized and slightly crispy, for about 2 minutes.
  • Add the sugar, fish sauce, oyster sauce, and soy sauces. Stir-fry for 1 minute. Add the basil and stir-fry until wilted. Serve immediately.

My first encounter with Thai-style pork belly rolls was at a Thai restaurant in Honolulu, Opal Thai. We arrived just in time to secure a seat before they closed for the afternoon. As the dining room was being tidied up, the owner himself came over to our table for a chat. He inquired about our familiarity with Thai cuisine, our preference for spice, and what we had planned to order.

He then proposed if he could surprise us with some dishes of his choosing. We agreed, and that’s how this enchanting dish made its way to our table. I’ve tasted other Thai basil dishes before, but this version with its scrumptious, crispy pork elevates it to a whole new level.

From the moment I tasted it, I knew I couldn’t wait for another trip to Hawaii to enjoy it again. I will forever be thankful to that chef/restaurant owner who was so open about his cuisine and culture, while also encouraging his customers to try something different.

Thai basil is a wonder ingredient. It can instantly amplify the flavor of any protein or vegetable. Combined with garlic, chili, sugar, soy sauce, fish sauce, and oyster sauce, it orchestrates a symphony of extraordinary flavors and textures.

This recipe for Thai Basil Pork Belly Rolls is inspired by our previous Thai Basil Recipe. This is not to say that it’s a knock-off. It simply demonstrates that this recipe can be adapted to anything and transformed into a delectable dish. However, this pork belly version holds a special place in my heart!
