Prepare for a taste explosion with our Simple Thai-Style Grilled Chicken Thighs recipe. It’s simplicity meets Thai flavor perfection


  • 2 tablespoons of Sriracha

  • 2 tablespoons of brown sugar

  • 2 tablespoons of soy sauce

  • 2 tablespoons of fish sauce

  • 3 cloves of garlic, minced

  • 2 teaspoons of ground ginger

  • Juice and zest of a lemon

  • Vegetable oil

  • 6 boneless, skin-on chicken thighs

  • 4 carrots, cut into large pieces

  • 1 large onion, cut into wedges

  • 2 cups of chopped basil leaves


  • Preheat the oven to 400 degrees Fahrenheit. In a medium bowl, combine the Sriracha, brown sugar, soy sauce, fish sauce, garlic, ginger, lime juice, and lime zest.
  • Heat 2 tablespoons of oil in a roasting pan on your stove over medium heat. Sear the chicken skin side down for 5 minutes. Flip the chicken and sear for another 3 minutes. Add the carrots and onions to the pan. Pour in the sauce mixture, deglazing the pan as you mix everything together.
  • Arrange all the chicken pieces skin side up among the vegetables and drizzle with a little more oil. Place in the oven and bake for about 35-40 minutes. Add the Thai basil halfway through baking. Serve with rice.

These Thai Grilled Chicken Thighs are seasoned with a Thai-inspired sauce made from lemon, brown sugar, Sriracha, soy sauce, fish sauce, ginger, and garlic. The chicken thighs are then roasted on a roasting rack along with carrots, onions, and fragrant Thai basil leaves to meld all the flavors together.

Winter is finally upon us once again! It’s my favorite season for so many reasons –– cozy coats, flannel shirts, falling leaves, and the fact that it’s finally acceptable to turn the oven back on!

While the oven is usually banished during the summer months (because let’s face it . . . it does heat up the house a bit, and who wants that when it’s 96 degrees outside and humid?), fall/winter is the time to really put it to good use.

We’ve actually accumulated a stash of grill and roast recipes that we’ve kept under wraps until they become seasonally appropriate once more, and here’s one of them: Thai Grilled Chicken Thighs.

Let’s talk about this recipe.

Lemon grilled chicken thighs with potatoes. It involves searing the chicken right in the grill pan on the stove, tossing all the other ingredients into the same pan, and then popping it into the oven for half an hour. When you can get a delicious dinner on the table using just one pan, people tend to be pretty happy about it –– especially busy people.

This Thai Grilled Chicken Thighs recipe employs the same technique, but instead of using lemon as the main flavor component, we’re mixing up a lemon-inspired sauce with a touch of brown sugar, Sriracha, soy sauce, fish sauce, ginger, and garlic. It may sound like a lot of ingredients, but I bet you already have most of them in your pantry!

Instead of potatoes, we’re using carrots and onions as well as some Thai basil leaves (or regular basil if you can’t find Thai basil) to tie everything together. If you’re in search of another one-pan meal, you’ve found it. I mentioned to all you lemon chicken lovers out there that you should serve it with a salad to round out the meal. For this dish, all you need is a plate of steamed dumplings!
