Ingredients
2 tablespoons of Sriracha
2 tablespoons of brown sugar
2 tablespoons of soy sauce
2 tablespoons of fish sauce
3 cloves of garlic, minced
2 teaspoons of ground ginger
Juice and zest of a lemon
Vegetable oil
6 boneless, skin-on chicken thighs
4 carrots, cut into large pieces
1 large onion, cut into wedges
2 cups of chopped basil leaves
Directions
- Preheat the oven to 400 degrees Fahrenheit. In a medium bowl, combine the Sriracha, brown sugar, soy sauce, fish sauce, garlic, ginger, lime juice, and lime zest.
- Heat 2 tablespoons of oil in a roasting pan on your stove over medium heat. Sear the chicken skin side down for 5 minutes. Flip the chicken and sear for another 3 minutes. Add the carrots and onions to the pan. Pour in the sauce mixture, deglazing the pan as you mix everything together.
- Arrange all the chicken pieces skin side up among the vegetables and drizzle with a little more oil. Place in the oven and bake for about 35-40 minutes. Add the Thai basil halfway through baking. Serve with rice.
