  • 2 cups of refried beans (or bean puree)

  • 1-2 cups of shredded cheese

  • 3-4 bread rolls

  • Optional: butter

  • For Pico de Gallo:
  • 2 plum tomatoes

  • 1/2 onion

  • 1/2 jalapeno

  • 1 lime

  • 15-20 sprigs cilantro

  • 1/2 teaspoon salt

  • For Black Bean Puree:
  • 1 can black beans

  • 1/2 onion

  • 2 garlic cloves

  • 2 chipotles in adobo

  • 1 tablespoon adobo sauce

  • 1/2 teaspoon cumin

  • 1/2 teaspoon salt

  • Freshly ground black pepper

  • 1/2 cup water (or stock)


  • To create the bean puree, start by roughly chopping half an onion and peeling two garlic cloves. Sauté them in a bit of oil over medium heat for 5-7 minutes. Drain and rinse a can of black beans, then add them to the onion mixture. Include 2 chipotles in adobo, 1 tablespoon adobo sauce, 1/2 teaspoon cumin, 1/2 teaspoon salt, freshly ground pepper, and 1/2 cup water (or stock). Simmer for a few minutes until heated through, then blend the mixture until smooth using a blender or food processor. Tailor the salt seasoning to your liking.
  • For a fresh Pico de Gallo, thoroughly rinse the veggies. Chop 2 tomatoes, 1/2 onion, 1/2 jalapeno, and 15-20 sprigs of cilantro. Combine them in a mixing bowl with 1/2 teaspoon salt and the juice of half a lime. Sample the dish and modify the seasoning by adding more salt or lime juice if necessary.
