  • 2 cups of vegetable oil for the frying process

  • 1 cup of all-purpose flour

  • 2 tablespoons of cornstarch

  • A pinch of salt

  • 1 cup of water

  • 1 large egg yolk

  • 2 large egg whites, softly whipped

  • 1 pound of medium-sized shrimp, peeled and deveined, with tails intact


  • Prepare all the ingredients. Heat the vegetable oil in a deep-fryer to 375 degrees F (190 degrees C).
  • In a large bowl, whisk together the flour, cornstarch, and salt, creating a well in the center.
  • Pour the water and egg yolk into the well, and mix until just moistened; the batter may be lumpy. Stir in the egg whites.
  • Dip each shrimp individually into the batter to coat, leaving the tails uncoated.
  • Once you’ve battered three shrimp, carefully place them into the deep fryer and fry until they turn golden brown, which should take about 1 1/2 minutes.
  • Use a slotted spoon to remove them from the oil and let them drain on a plate lined with paper towels. Repeat this process with the remaining shrimp, battering a few at a time while the previous batch is frying.
